Determination of soyasaponins using liquid chromatography/atmospheric pressure chemical ionization-mass spectrometry

Abstract

The separation, identification and quantification of soyasaponins in soy nutraceutical preparations using liquid chromatography/atmospheric pressure chemical ionization-mass spectrometry (LC/APCI-MS) were described. The structure of the two most abundant classes of soyasaponins were shown. A method has been developed for direct determination of soyasaponins in soy products-based on LC/APCI-MS. Soy-based nutraceutical products were analyzed by LC/APCI-MS with detection of protonated and sodiated molecular ions. Monitoring the soyasaponin-specific protonated aglycone and dehydrated aglycone ions throughout the chromatogram provides a unique fingerprint for soyasaponin content in the samples.
