Abstract
We began this chapter discussing food packaging and how it interacts both with food products and the outside environment. Then, we explored how these interactions could be used in functional "smart" packaging technolo gies. Smart packaging can be further defined as "active," "responsive," or both. We then concluded this chapter with a discussion of rising food pack aging technologies followed by an overview of the challenges and obstacles to smart packaging technologies.
