Interaction of milk proteins with inulin

Abstract

Data collected from polyacrylamide electrophoresis indicated that inulin and milk proteins are involved in interactions with each other. The milk protein that did not interact with inulin was α-lactalbumin. The findings of this study touched the surface concerning the understanding of the type of interactions that may be involved to form the protein-inulin complex. Further research would help to obtain a better understanding of not only the type or types of interactions occurring among milk proteins and inulin, but increase the understanding of the interaction between proteins and carbohydrates in general.
