Abstract

There are many advantages of using biosensors as an analytical tool in food processing which enable easy automation, simple and portable equipment, and fast analysis. Biosensors can be applied in quality control laboratories or in industrial facilities at any stage of food processing. The chapter high lighted the basic principle of different format of biosensors with classifica tion of various biosensor generation and applications in food processing. Also, commercial biosensors are included along with top tier manufacturers involved in the development of biosensors for the food industry. Further more, the chapter discussed some major fields where biosensors can play critical role in the future of food safety and food defense.
